This is one of those on the list that I'm being "flexible" with...originally this was to become proficient in yoga, but since that could take a lifetime, being vegan for a month seems more reasonable! At the beginning of the year, as we were stuck inside due to multiple snow and ice storms, I resorted to watching many documentaries on Netflix. As I’m always trying to figure out how I can best serve this big beautiful planet we live on, I gravitated towards the more environmental documentaries. One that really resonated with me was Cowspiracy. If you haven’t seen it yet, I highly recommend using your next free 90 minutes to do so…its quite eye opening! Much of what we hear about how humans are causing climate change is through vehicle carbon emissions, what is not highly reported are the majority of the gases deteriorating our ozone come from producing animal proteins for human consumption. Between the personal environmental impact, and the reported health benefits, I had been trying to eat mostly vegan/ vegetarian since the new year. However, it was super easy to fall back on old habits…”one egg isn’t going to make that big of a difference”, etc. With my running partner and her husband making the almost complete switch to vegan, I thought it was time for me to get a little more serious about my attempts. I started on July 2nd , for no particular reason than I just woke up that morning and said “let’s do this!!”. The 30 days went through to July 31st, and for the most part it was a success. There were a few times eating out that there may have been some dairy products hidden in the sauce or something, but only a couple of times. Now granted, I live in crunchy Portland where it is generally super easy to find vegan restaurants, or at least restaurants that have vegan options. It is also summer time, so there are tons of locally grown, in-season fruits and veggies. One of the biggest challenges during the month, were a couple of days where I was going through some not so happy emotions and soooo craved junk food! I was able to create some pretty damn delicious nachos and I can’t say enough good things about the Coconut Bliss Ice Cream, so f**ng good!! I did end the 30 days with a crab feast of fresh Dungeness crab from the coast, but otherwise have stuck pretty well to about 95% vegan. It really isn’t that hard once you put your mind to it. Overall, I feel pretty good. It does take a little time for your digestive system to get used to all the veggies and fruit, so investing in really good TP would be wise! I didn’t really lose any weight, but I feel less bloated and my skin feels less dry, and I feel great about putting less of a strain on the environment!!
